Back to school means jam-packed schedules, afternoon activities and less time to think about nutritious meals for the family!  But, as falls kicks-in and school takes over, look to a nutrient-rich meal like the Szechuan Beef Stir-Fry that is easy to prepare and full of flavor.

Sitr-Fry is an easy and quick cooking method that's perfect for a weeknight meal.  Here are some tips to help you get started:

  • For stir-fry recipes, cut beef steaks into ¼-inch thick strips.  To make this easier, freese the steaks for about 10 minutes before slicing or ask your butcher to cut the beef into strips. 
  • Lots of different vegetables work great in stir-fry - even frozen vegetables - so include your family favorites.    
  • Keep in mind that it's best to choose frozen over canned vegetables, as frozen veggies often have more nutrients!
  • If you don't have a wok, a nonstick skillet works perfect for stir-fry! 
  • For this stir- fry recipe, Teriyaki is a great substitution for sesame-ginger sauce.  Serve the beef and vegetables over brown rice or Udon, glass or vermicelli noodles.  In addition, try cashews instead of peanuts for a creamy nut flavor.
